July 4th Cake

There’s nothing like celebrating the 4th of July like going to the beach.  It’s even better when you have a free place to stay and an eager Grammy to help out with her precious granddaughter…so we like to take regular trips to visit.   Even though traffic is completely insane that time of year, it’s the atmosphere that’s so great.  Everyone is down there to celebrate the holiday, everywhere you look there’s red, white and blue…decked out golf carts, houses, cars, people’s clothes, even their pets.  It’s an infectious and cheerful holiday that is mostly spent with fireworks and alcohol…which is actually somewhat of a scary combination.  Uh oh!

This is a 2 tier cake with 3 layers in each tier, 10 inch and 6 inch.  The stars are made out of chocolate, including the topper.  Two of the layers are white cake and one layer is red velvet, to stick with the colors that go along with the holiday and the cake.  The icing is homemade buttercream.

I love the middle.  Look at those pretty colors!

Now, for the cupcakes…and yes, that is a red chocolate star on top.  These were super cute, and I got a lot of compliments on how cool the inside of the cupcake looked.  I’ll have to agree as well, because every time I took a bite, it was hard to resist looking at the swirl of colors.  Too cute.  The cake had a layer of red velvet, but with the cupcakes, I just stuck with all white cake and just tinted the two colors red and blue instead of changing up the flavor.  They were quite delicious!
