Anniversary Beach Cake

What better way to celebrate your 65th anniversary than vacationing at the beach with family?  This cake was designed to go with the two events!  This is a 2 layer 12 inch round red velvet cake with cream cheese icing.  The seashells, 65, and Happy Anniversary are all made out of chocolate.  The sand is made out of graham cracker crumbs.  I used molds for the seashells and words, and used cookie cutters to make the numbers.  After they set, I attached lollipop sticks to the back of them with chocolate so they would stand up straight on the cake.  Before I starred the icing on the sides, the cream cheese icing was stored in the refrigerator to help make the consistency a little more firm for decorating.  I used pearl colored luster dust on all of the chocolates to give them an added effect.
