Peanut Butter Ritz Cookies

The word “favorite” doesn’t even do justice for these cookies.  Whenever I make a batch of these, they disappear faster than anything else I’ve ever made.  Even when I talk about them in front of people who have had them, they start asking questions as to when I’m going to make them again…they really are that good.  Two Ritz crackers with creamy peanut butter in between, covered in white chocolate.  The combination of sweet and salty is perfect, and of course the added peanut butter just makes them that much better.

I’ve been making these for years.  My grandmother was the one who got me hooked on these, but my recipe is a little different.  I use a little bit of Gulf Wax to thin out the chocolate, and about a tablespoon of peanut butter in each cookie.  I like a thicker consistency of peanut butter with a slightly thicker consistency of chocolate, it makes the cookies more rich.  They.  Are. Delicious.  There should be a warning label for these cookies.  A dressed up version of these would be the Happy Cookies, which are super cute AND delicious!

Recipe:

1 bag white chocolate wafers OR 1 package white almond bark chocolate

1/8 bar paraffin (gulf) wax, chopped

1/2 package Ritz crackers

1 jar peanut butter

Create sandwich cookies with crackers and peanut butter.  Melt chocolate and wax in microwave in 30 second intervals, stirring after each time until completely melted.  Using tongs, dip sandwich cookies into chocolate, completely covering, then place on wax paper to harden.

*One batch usually makes about 30-40 cookies, but you can make more or less depending on how much of the ingredients you have.
