Well, I’ve been looking for recipes lately that are different from what usually come out of my kitchen. As I was flipping through a recipe book at the dinner table, I came across a recipe for lemon bars. I looked at my husband and asked, “Do you like lemon bars?” and he replied, “I don’t think I’ve ever had them, but I do like lemon flavored stuff, so I probably would like them.” I nodded. He’s almost always open to trying something new, especially with food. After doing some research on different recipes for lemon bars, I combined what other people had recommended and suggested for making the recipes even better, and got to work.
The original recipe calls for using a 9×13 inch baking dish, but I used a slightly smaller one, 8×11. And honestly, I thought the thickness of these bars was perfect. Not too thin, but not overly thick, either. If you’re looking for a dessert with a tart, lemony flavor…look no further! My brother and his wife are currently counting their calories, so I decided to count up the calories for these little guys so I could give them information if they decide to indulge in dessert for dinner tomorrow night. I cut this batch into 24 pieces, and they’re 154 calories each. So, if you’re counting calories too, there’s a tidbit of information for you! 😉
For the Crust:
1 cup butter, softened
3/4 cup white sugar
2 cups all purpose flour
1/4 teaspoon salt
Preheat oven to 350 degrees. In a medium bowl, blend together all ingredients. Press into the bottom of an ungreased 8×11 inch pan. Bake for 20-25 minutes, or until firm and golden.
For the Filling:
4 eggs
1 1/2 cups white sugar
1/3 cup all purpose flour
2/3 cup lemon juice
Whisk together sugar and flour. Add eggs and lemon juice, whisk together until combined. Pour over baked crust. Bake for an additional 25 minutes. After cooling completely, sprinkle with powdered sugar. Store in refrigerator to maintain firmness.
