Sometimes, I get lazy. When I make a batch of cupcakes for a large group and a lot of times making decorated cakes, this is these are the recipes I use. What’s funny is that literally NO ONE knows the difference between this cake recipe and something from scratch. Usually, they’re commenting on how delicious it is, and they want the recipe…and that look of shock always makes me laugh when they find out it’s not from scratch. I may enjoy that shocked look a little too much, because it’s entertaining.
Doctored Cake Mix Recipe (also for cupcakes):
1 box Duncan Hines cake mix
1 small box instant pudding mix
1 cup oil
1/2 cup water
4 eggs
8 oz. sour cream
Beat all ingredients at medium speed for 2-4 minutes.
*You can use any flavor combinations that you would like. Chocolate with chocolate, yellow with vanilla, strawberry with cheesecake pudding, the list goes on. Best part is, you can make your friends think you’re the greatest baker on the planet. And seriously, who wouldn’t want that title?
Buttercream Icing Recipe:
1 cup vegetable shortening
1 cup unsalted butter, softened
1/2 teaspoon salt
2 lbs. powdered sugar
1/2 cup water
2 teaspoons vanilla
With electric mixer, beat first 3 ingredients at medium speed for 3-4 minutes, until creamy. Add remaining ingredients, continue mixing for another 3-4 minutes.
*For the standard decorator icing, add 1 cup shortening and omit the butter.
**For a fluffier icing, add 1 can Duncan Hines icing the last 1 minute of mixing.
